Introducing Las Margs Café At Emerald Downs

AUBURN, Wash. (Feb. 5, 2025) – Axtlan Inc., owner of four Mexican restaurants including Las Margaritas in Auburn, are the new operators of the Quarter Chute Café at Emerald Downs.

The changeover takes effect Monday, Feb. 24, when training begins for the 51-day meeting that runs April 27-Sept. 7.

Zulema Garza, Operations Manager for Axtlan, said “Las Margs Café” will operate 7 a.m. to 2 p.m., Wednesday thru Sunday, with a menu featuring breakfast burritos and light Mexican fare along with traditional breakfast and lunch items. According to Garza, Las Margs Café will be staffed with personnel from Las Margaritas in Auburn, located four minutes from Emerald Downs.

“We looked at several options but listening to comments and suggestions, Las Margaritas was clearly the best way forward,” said Bob Fraser, Emerald Downs Director of Operations. “This will be a great addition for horsemen, owners, and people associated with the industry.”

Emerald Downs is among a handful of tracks with a stable kitchen open to the public, with diners able to view horses during morning training hours. From the track’s opening in 1996 through the conclusion of the 2023 season, Joe and Sally Steiner operated the Quarter Chute Café.
